FAR East Jerk Cornish Hen
Ingredients:
1 Grilled Boneless hen rubbed with mild jerk marinade served on a
Ginger infused passion fruit Coulis
Passion fruit coulis
3/4 cup Purée Passion Fruit Concentrate,
1/4 cup granulated sugar
1oz ginger cleaned and beaten
2 oz rice wine vinegar
Method:
Caramelize sugar in a heavy medium saucepan
Add vinegar and stir
Add ginger and passion fruit concentrate to sauce pan and bring to a boil
Stir over medium heat until sugar dissolves
Stir frequently Simmer until mixture has reduced to 1/2 cup, stirring frequently,
Set coulis aside
Cornish Hen
Cut hen length wise and remove bones
Use jerk marinade the litely marinate the hen
Place on hot grill for about 6 mins on each side
