Voting

All photo entries will be posted on Facebook and our website. You may vote for your favorite entries by “liking” the photo on Facebook, or emailing photocontest@jamaicainn.com and including the entry number in the email.

Prizes

1. 1st Prize  - A 3-night stay at Jamaica Inn for travel between July 1, 2013  and November 18, 2013. Room category is selected based on availability. This prize is room only and does not include travel or incidentals. Prize winner may extend their stay at regular room rates.
2. 2nd Prize  - Two Jamaica Inn Polo Shirts and two Jamaica Inn baseball hats will be shipped to winner.

The 2013 Best Hotels are calculated based on the aggregate opinion of travel experts and guests expressed through awards, recommendations and ratings.

Jamaica Inn is ranked #4 in the Caribbean and is the #1 Best Hotel in Jamaica. The editors at U.S. News commented that our Jamaica hotel “is considered by many guests a home-away-from-home.”

Of 459 hotels in Jamaica, 30 are ranked on the U.S. News list of the Best Hotels in Jamaica and Jamaica Inn is at the top.

To create this year’s rankings, U.S. News factored in the prominence of industry awards a hotel receives along with its reputation among travel experts and guests. In total, 273 Caribbean hotels were analyzed for the 2013 rankings. Only a fraction of these scored high enough to be named Best Hotels by U.S. News.

“This is our third year ranking hotels, and the bar continues to climb for luxury properties,” said Chad Smolinski, Vice President of Rankings and Reviews at U.S. News & World Report. “Desirable amenities and hotel loyalty programs will no longer suffice. At the exhibition you will see many antique maps such as this one pictured here. First published 1589, Ortelius “Maris Pacifici” is the first map of the Pacific Ocean. This copy is the 1606 English edition, of which as few as 300 copies were produced.

Jonathan Collier, history buff and collector of antique maps and prints, will fascinate you with details about the maps, the cartographers and how the maps were made. He will even explain what was going on in the world at the time the maps were created and how that may have influenced the design of the map. i.e. some of the maps of the US have no west coast as it had not yet been explored by the Europeans.

Jonathan has a wealth of information both for the collector and for the general viewer who might want to know just the basics about maps and engravings.

Most of the items at the exhibition will date from around the 1600′s and are mostly copper engravings on rag paper. If colored, the maps were colored by hand.

Recipe serves one.

Ingredients

• 2 oz Bucherondin goat cheese
• Puff pastry
• 2 oz heavy cream
• 8 oz balsamic vinegar
• 1 oz Pine nuts
• ½ lb Callaloo (spinach)
• 2 oz Onion
• 2 oz Bell Peppers
• 6 pc Arugula leaves

Directions

1. Preheat oven to 350°F
2. Roll and cut puff pastry to fit tart shell
3. Spray tart shell with cooking spray for easy removal of puff pastry after baking
4. Add puff pastry to tart shell and bake blind until half done
5. Add cheese and heavy cream to pastry and continue to bake until base is golden brown
6. Remove pastry from tart shell and set aside to cool
7. In a sauce pan, reduce balsamic vinegar until syrup consistency. Set aside to cool.
8. In a sauce pan, add callaloo, onion and bell peppers. Steam until soft, adding salt and pepper to taste.

Presentation

1. Arrange arugula leaves on the plate and drizzle with balsamic syrup.
2. Place the tart on top of the leaves and syrup and fill with Callaloo.
3. Finish with a sprinkling of toasted pine nuts.
